
A Coffee Lover’s Dream: Gideon’s May Cookie & Cold Brew Combo
It happened again today. No sooner had I stepped out of the chocolate-scented comforting darkness that is Gideon’s Bakehouse than a guest was a foot away from me asking if it was worth it. Short answer: yes. Long answer: keep reading.
Today’s occurrence has happened so many times that it’s almost funny. I can guarantee that soon as I sit on the ledge just outside the sweet shop that a perfect stranger will point to the standby line, mention that the line is SO LONG, and question the worth of the treat I’ve just purchased. Ummm…
Sometimes it happens as I’m eating said cookie, and sometimes, like today, it happens even before I’ve taken a bite of my cookie or a sip of my cold brew. And, every time, I say a resounding, exuberant yes. And today, I also mentioned that the line is running at only about 20 minutes and that the cookies found inside are worth every minute that you have to wait for them.
Some may balk at a $6 cookie; to each their own. For me, $6 for a half-pound cookie that I can bet will be one of the most incredible treats to ever cross my lips is a small price to pay.
I made my way to Gideon’s Bakehouse in Disney Springs today for their cookie of the month and one of their brand-new cold brews. If you’re a sucker for coffee like I am, you’re going to love this month’s one-two punch: the Coffee Toffee Cookie and the Almond Cookie Cold Brew. Dear me, what a combination.

The Coffee Toffee Cookie is a returning limited edition flavor at Gideon’s, with decaf ground espresso beans both woven throughout and covering the top of the cookie. You’ll also find generous chunks of toffee crowning the cookie, along with chocolate chips and a sprinkling of sea salt. Almost half of this cookie was gone in a flash; it’s so smooth and so creamy that I gobbled it right down.

We’re now into the warm and sweaty season here at Walt Disney World (we knew it was coming sooner or later…sigh…), so today’s gift of a new Gideon’s cold brew concoction was a welcomed thing. If you enjoy the flavor of almond, this’ll check off the boxes for you. The flavor of the cold brew leads heavily with vanilla with the almond cookie flavor coming just behind. If nibbling Biscoff cookies at 30,000 feet is your favorite perk of flying Delta, you’ll love the taste of this cold brew.
Keep in mind that Gideon’s Bakehouse offers four daily cold brew varieties in addition to the flavor of the month: Classic, French Toast, Cookie Butter Butterscotch, and the fan-favorite Peanut Butter. All cold brews are vegan and made with oat milk. The beans are locally roasted by Lineage Coffee, a partnership that goes back to the East End Market days when Gideon’s and Lineage were just starting out. If you stop by East End Market in Orlando, which I highly recommend that you do, be sure to stop by Lineage after grabbing your cookies with almost no wait time at the original Gideon’s location. Their Mocha Latte is made with French baking chocolate, and it’ll change your life. I promise.

If you’re stopping by Gideon’s Bakehouse on a Friday like I was, please grab a slice of their Rainbow Crunch Cake while you’re at it. It’s in celebration of Pride, and its marshmallow buttercream is to die for. You’ll thank me.
